Canning Some Vegetables!

I had alot of left over green tomatoes in my garden and it was calling for frost.  My husband and I went out and picked all of them and I should of gotten on the internet before we did this.   The internet says to pull plant and all out of the ground and shake off the dirt and hang it upside down in a cool place and the tomatoes will continue to turn red.  Well it was to late for that, so I found this recipe on the internet for Green Tomatoe Relish and it had lots of reviews that said it is very good.  You just put tomatoes, green peppers, red peppers, and onions in a food process and chop them up, add some vinegar, sugar, mustard seed and celery seed and then bring it to a boil for 5 minutes and process.  I did give it a little taste and it is delicious.  I can't wait to put it on a hamburger or hotdog sandwich!  Here is a picture of all my hard work.  I made some small jelly jars, to make some gift baskets at Christmas!


Now today, I have some Slow Cooker Apple Butter cooking and I will be filling jars with that.  Here is what I have started now.


This is a very easy recipe, you just slice up 5-lbs. of apples and put them in the crockpot with some apple cider and spices.  This will have to cook until tomorrow morning, so I will fill the jars tomorrow.  I wanted to show you the slicer that I used.  My mother purchased this and then never used it and passed it along to me.  I just love this!  It is called a "Vidalia Chop Wizard".  It comes with two different size blades and you just lay your vegetable or fruit on it and slam the lid.  I chopped 5 pounds of apples in about 3 minutes!  This was so easy to get ready and my house smells wonderful!!  Only problem is, it is making me hungry!  I like to can and it is becoming a lost art!  I wish I could have a larger garden and can everything!  I canned tomato juice last year which I use to make chili, but my tomatoes this year just did not want to redden up, I still have about 5 jars of that left and it just makes the best chili ever!  If anyone wants the recipes, just leave me a comment and I will send them to you!  I hope everyone has a Happy Halloween!!
